From the specification: Varietal wines (at least 85% of one variety suitable for Sicily) must meet the limits of the corresponding colour; two-variety wines must come only from the two named varieties, each above 15%. Vinification belongs in the production zone but may traditionally take place anywhere in Sicily. Aromatic grapes may be lightly dried on the vine or on racks. Sweetness may range from dry to sweet, so it is left null. Frizzante and novello wines need only 9% and 11% vol total alcohol. Minimum natural alcohol may be lowered by 0.5% vol in poor years.
