From the specification: Varietal wines (32 varieties) share generic limits by grape colour; white varietals may also be frizzante, vivace or spumante, black ones frizzante, vivace or novello, and Uva Longanesi, Malbo gentile and Sangiovese also passito. Most types range from dry to sweet. Partially fermented musts must be sweet, with actual alcohol between 1% vol and three-fifths of the total. Vinification is also allowed across Emilia-Romagna; up to 15% of wine from outside the zone may be blended in. Artificial carbonation of frizzante is prohibited.
