From the specification: Varietal wines ('varietale' products) name one of 47 listed varieties (Aglianico, Aleatico, Barbera, Bianco di Alessano...) and take the limits of the wine of the same colour; they may also be frizzante, spumante (white only), passito, novello (red only), da uve stramature, and rosato from black grapes. Two varieties may be named if together 100%, the lesser above 15%. Frizzante and spumante grapes may have 0.5% vol less natural alcohol. Most types range from dry to abboccato/amabile or sweet, so sweetness is null. Vinification in the production zone or anywhere in Puglia. Passito and stramature grapes may be dried, also on the vine.
