From the specification: Retsina (resinated wine) PGI covering the whole prefecture of Boeotia: Aleppo pine resin up to 1 kg per 100 litres of must is added before or during fermentation; maximum actual alcohol 13.5 % vol; acidification up to 1.5 g/l allowed; 'Ρετσίνα νεαρή/Φρέσκια' must contain about 1 g/l CO2. Vinification may also take place in neighbouring prefectures under national retsina law.
