From the specification: Large regional PGI: still white, red and rosé (ερυθρωπός) wines dry to semi-sweet; semi-sparkling (ημιαφρώδης) white and rosé; sparkling (αφρώδης), quality sparkling (αφρώδης ποιότητας) and aromatic quality sparkling (white only, Assyrtiko and the Muscats) in every sugar category from Brut nature to Doux; and a liqueur wine (fortified from red-wine varieties; analytical limits not given). Sparkling wines may be made by second fermentation in bottle or in closed tank, so sparkling_method is null; aromatic quality sparkling wine must take at least one month to make and no liqueur d'expédition may be added. Maximum grape yield is 12,000 kg/ha for red and 13,000 kg/ha for white varieties (rosé and rosé sparkling recorded with the lower red figure); hl/ha limits are given only for still red (96) and white/rosé (97.5) wines. Vineyards must lie above 20 m in Dodecanese prefecture; maximum total acidity 7.5 g/l (7.0 red); sweetening is permitted for semi-dry and sweeter wines.
National tier (DOC/DOCG) not captured yet; rules extracted from the specification text.
