From the specification: Each colour has principal (more than 50% of the wine), secondary (under 50%) and innovation (at most 15%) varieties: principal lists of 23 for red (Alicante Henri Bouschet N, Cabernet Franc N…), 27 for rosé and 28 for white (Altesse B, Alvarinho B…); gris and gris de gris are recorded with the rosé list, gris de gris being made only from grey grapes. A white principal grape may make up to 20% (innovation white up to 15%) of a red or rosé if co-fermented. Single-variety labels need 85%, multi-variety labels 15% each. Minimum acquired alcohol may drop to 9% after alcohol reduction. The 252 g/l must-sugar minimum applies to vins de raisins surmûris with at least 15% total alcohol; these must be 100% of the vintage. Red wines (except primeur and surmûris) must finish malolactic fermentation. 'Sur lie' rosés and whites spend only one winter in vat or barrel and are bottled from 21 March after the harvest within the zone. Smaller units: Coteaux de Narbonne, Cité de Carcassonne.
